Montagnolo is a brilliant new
creation from the high mountains of the Allgau region of Bavaria. Based on
old traditional recipes, this type of soft blue-veined cheese was highly
appreciated amongst the nobility of the Renaissance. Different from any
other blue, its texture becomes more buttery as it ripens. Montagnolo has
the unique shape of a cylinder which imparts a buttery sweet taste to it,
yet the blue mold throughout gives it a pleasantly piquant touch.
