Uncooked soft whole goat's milk cheese presented in the shape of the base of a square pyramid.

Geographical area: Twenty-two communes in the Blanc arrondissement (Indre département).

This goat's milk cheese of the Tours region stood out from neighbouring products by the original shape it adopted in the 18th century, allegedly modelled after Pouligny's town belfry.

The cheese is obtained by primarily lactic coagulation with the addition of a small amount of rennet. The curd is kept in the mould 24-36 hours before unmoulding and salting. The cheese is ripened for at least 10 days.
