Full-fat cheese; matured, from cured to ripe; cylindrical with flat faces; hard rind; firm,

compact paste; maximum weight 4 kg..

The production and processing area comprises Zamora province.

Milk from Churra and Castilian ewes. Coagulation with rennet at 28-32°C for 30-45 minutes; dry or brine salting; matured and stored for at least one hundred days.

This province is the primary producer of ewe's milk in Spain; the flocks graze on the area's bare plateaux and wooded pastures; the continental climate favours plant growth, resulting in an end

product characteristic of the area.
