Ticklemore

Located in St. Totnes, Devon, Robin Congdou has been making and selling cheese from a cheese shop known as Ticklemore. Starting 14 years ago with Benleigh Blue, Robin makes the cheese just a few miles up the road, deep in the countryside. Ticklemore cheese is made from goat’s milk, is hard pressed and dry salted. After 10 weeks of maturation in hand-molded baskets, this moist, semi hard cheese is still creamy with a mildly acidic flavor. Ticklemore is aged from 2-3 months and turned twice weekly. The result is a lovely medium flavored goat cheese.
