Slack Ma Girdle
Slack Ma Girdle is the name of a cider apple native to England's mid-country. This cheese of the same name is created by Charles Martell, producer of Hereford Hop and Stinking Bishop. Although no apples are used in its production, its top and bottom are coated with dried nettle leaves, a natural herb that tastes like a cross between parsley and thyme. This cheese is very soft and sticky with a mellow, lemony flavor that owes some of its character to the nettles. Suitable for vegetarians.
