Northumberland

Loosely based on a gouda style recipe, this cheese has a creamy and smooth compact texture. It has a mild initial taste, followed by a lasting full flavoured after-taste.

There are two other varieties; Smoked, Nettle.

For the Northumberland with nettles, the extra ingredients are added into the cheese vat so that the full flavour is able to spread throughout the whole cheese. The Smoked Northumberland is still fairly young and is slowly oak-smoked for up to 4 days, at cool temperatures so as not to affect the texture of the cheese. The subtle smoked flavour is allowed to penetrate into the middle of the cheese.
