Milleens

Veronica and Norman Steele had been making Milleens on the Beara Peninsula for more than 10 years, and it is seldom the same twice, though never disappointing. The aroma is of farmyard, wet rocks and heather, they have their recurring in the flavour of the firm, supple, sweet cheese, a which also has hints of cream and butterscotch. At his peak, but paste becomes almost fluid, and the taste is yeasty and savoury, with a strong, herbaceous tang and the suggestion of sea breezes. Milleens has the sweet - sour taste associated with a genuine Trappist cheeses it matures in four to 10 weeks and has a fat content of 45 per cent.
